Fran's Autumn Recipe
Can you feel the autumn energy is changing and therefore your energy is changing too? The days are becoming shorter and the temperature is dropping in the evenings. For me this is a sign to get my casserole pot out and create some nurturing warming food. Here is a recipe I variate according to the veggies I have in. It's so easy and can be cooking while I am getting on with other things before I sit down and relax.

2 x 15ml spn/2tbsp olive oil
1 large onion
3 cloves garlic, crushed (or as garlicky as you like!
2 sweet cut into chunks (with skin on for extra nutrition)
I like to add pumpkin/butternut squash to this for real autumn warmer!
2 x 5ml spn/2tsp paprika
1 x 5ml spn/1tsp cumin
1 x 5ml spn/1tsp turmeric
150g/5oz green beans, trimmed and halved
1x cup of boiled chick peas (or a tin for speed)
1 x can chopped tomatoes
150ml/¼ pint vegetable stock (Bouillon low salt is best)
Freshly ground black pepper
Tablespoon of tamari

Rather than a big heap of bread, potatoes or pasta try this with a heap of green salad or my favourite some lightly steamed broccoli with a squirt of lemon juice.

Spending Time in Nature
Being in nature is something that sounds so easy and yet it is something we can easily overlook. I aim to be in natural light and with natural living things 5 x a week. Even if it’s just for 20 minutes…the benefits are unbelievable.
The research on health and wellbeing improvement from being in nature suggests

  • Increase in self esteem
  • Increased healing time
  • I creased feelings of calm and contentment
  • Increased feelings of appreciation and connectedness
  • Decreased stress

Did you know that child’s hospitals that have natural daylight coming in through the window’s the patients heal much quicker? Not only that, they are more likely to be positive about their healing process with a joyful spirit. This is exactly what it does for me. It's a real tonic. Here is a picture taken last week of me at the aquadrome in Rickmansworth.
